Cooking with your Neff oven
What is CircoTherm®?
Neff introduced CircoTherm® cooking over 30 years ago. This method of forced air cooking continues to be the benchmark for all fan ovens.
CircoTherm® works by drawing air in from the oven via a powerful fan. It then heats up the air and forces it right back into the oven cavity through strategically placed ducts in the rear wall. By continuously circulating hot air around the oven in this way the desired temperature is achieved more quickly and evenly than in a normal oven. This saves time and energy as little or no pre heating is required.
Because the hot air is focused directly onto the food being cooked, the heat is evenly distributed. In fact, a complete three course meal can be cooked at the same time without the flavours intermingling. As temperatures are lower, there is less splashing and spitting with CircoTherm®, which makes cleaning the oven much easier too.
CircoTherm® is great for roasting because of the way and speed at which the heat is delivered, as a result roasts are quickly sealed. This means the juices are retained, producing less shrinkage and moist, succulent joints.
Neff ovens work on our unique CircoTherm® cooking system but they also feature other cooking functions explained below.

CircoTherm®
A powerful fan draws air from the interior of the oven. It then heats up the air and forces it right back into the oven cavity through strategically placed shaped ducts in the rear wall. This system means the oven heats up rapidly, and needs little or no preheating.
Intensive CircoTherm®
Also referred to as Pizza Setting. Uses a combination of CircoTherm® and bottom heat. This is ideal for anything that needs a crispy underside like pizzas, or speciality breads. It can also be used for one stage pastry such as lemon meringue pie, eliminating the need for blind baking.
Bread baking
The bread baking temperature varies between 180ºC and 220ºC. This is ideally suited to baking crusty bread with an open texture. Up to three levels of bread can be baked at the same time.
Defrost
The CircoTherm® fan will circulate unheated air through the oven to speed up defrosting times. Ideal for delicate foods as well as fish and poultry.
Top/bottom heat
Provides conventional sources of cooking heat at the top and bottom of the oven. Heat travels to the centre of the oven by natural conduction. This is ideal for baking pastries and scones.
Bottom heat
Providing heat from the bottom of the oven only, for more focused heat and control. This method is ideal for pizza bases and pastry cases where you need a crispy underside.
Full surface grill
The grill element is situated in the oven roof. It is thermostatically controlled and will cycle on and off to maintain the required temperature.
Centre surface grill
You can use just the centre section of the grill for smaller quantities.
CircoRoasting
The grill element cycles on and off alternately, and the fan distributes the heat produced by the grill. This method can reduce cooking times by 35%-40% and is ideal for meats and poultry if you’re after a rotisserie result.
Dough proving
This function provides a warm, damp environment perfect for proving dough yeast.
Steam setting
A setting specifically used in conjunction with the Neff system steamer accessory. Giving you one of the healthiest cooking methods around.
Rapid heat
Reduces preheating times and where necessary is ideal for making scones and cooking from frozen quicker than ever.
Cleaning your Neff oven
CeramiClean® Liners
These ceramic coated liners, that may be on the back, sides and roof of your oven cavity, will effectively absorb and oxidise grease particles so they don’t build up over time. Your oven stays remarkably clean and therefore needs minimal maintenance. The great thing about CeramiClean is that these liners never need replacing.
HydroClean®
HydroClean is a brilliant aid to cleaning, softening greasy residues that can then be wiped away.
All you have to do is add 400ml of water and some washing up liquid to the base of your oven. Then, choose the HydroClean symbol on your oven’s control panel. This will activate the bottom heat function to heat the water to 60ºC. This produces steam throughout the oven which softens any greasy deposits. When the water cools, you can wipe out the oven with a sponge or cloth.
HydroClean works best once the oven has cooled down immediately after cooking. It’s environmentally friendly and uses very little energy.
TitanEnamel
TitanEnamel is a smooth titanium grey contemporary enamel interior which is scratch and acid-resistant and will withstand erosion from food stuffs like fruit acids. It is easy to clean; a quick wipe with a damp sponge and a little detergent is sufficient to keep the oven clean after normal operation.
Drop Down Grill Element/Removable glass door
Cleaning of your Neff oven is further facilitated by the grill element dropping down for easy cleaning of the roof of the oven. Even the door is simple to clean. It is designed with a full internal glass panel that simply unclips for quick removal and easy wiping.
Additional Neff oven features
FlexiRail® system
FlexiRail® makes your oven more versatile. It’s an internal rail and shelving system that means you can easily change and reconfigure your oven to accommodate different sized pans, dishes and roasting joints.
FlexiRail® uses individual plug in rails which can be easily moved. The robust, heavy duty rails clip on and off easily, and are very easy to clean – you can use as many or as few as you want, giving you total flexibility. They’re also very easy to clean as you can simply unclip, and put them straight into the dishwasher.
The FlexiRail® Plus system includes a pair or fully extendible telescopic rails which can be moved to a height that’s right for whatever you happen to be cooking. You can put a wire shelf or roasting pan on these extendible rails, which means you can pull out the whole dish and then stir or baste without having to remove it from the shelf. It’s safer and easier than having to remove food from the oven entirely. This is perfect for basting heavy roasts or stirring heavy casserole dishes.
The rails move smoothly and have rear stop bars to keep them from tipping.
Electronic control
Expert cooks need to feel confident that they can control their oven’s temperature with great accuracy. Our easy to use electronic controls will automatically suggest and maintain the exact temperature you need.
If you’re cooking delicate foods, you can rely on our electronic controls to automatically suggest and maintain a precise temperature for you. It gives you that extra confidence and cuts out any risk of heat fluctuations. The settings are easy to see, understand and adjust, giving you pin point control and flexibility when you’re cooking.
There are also several safety features incorporated into our electronically controlled ovens – these include a child safety lock and automatic switch off.
ClearText is an added feature of electronic control that is available on some Neff ovens. It’s an innovative way of selecting and controlling the various functions on your oven. Instead of having all of the icons on your oven fascia panel it groups them into relevant functions and presents them in a clear, simple manner.
Revolution handle
As well as looking extremely smart, Neff’s unique Revolution handle is ergonomically designed to make opening and closing your oven remarkably easy and safe.
As you open your oven door, the Revolution handle rotates towards you in a smooth, circular motion. Once the door is fully open, it stays fully visible at the top of the door. Revolution handles are safe and convenient, eliminating any awkward wrist movements.
NeffLight®
We’re the first appliance manufacturer to introduce bright, effective halogen lighting inside our ovens. A unique feature, the NeffLight® lets you see exactly what you’re cooking without opening the oven door.
NeffLight® provides an increased level of effective internal lighting in all areas of your main oven, so you can see how your food’s cooking without opening the door and letting the heat escape.
Most ovens have an internal lighting system, but when you’re cooking the effectiveness of the light is reduced. NeffLight®, however, produces bright, white halogen light on all three cooking levels, so you can see exactly how your meal is progressing. It’s clear, accurate and extremely useful.
A simple switch control automatically turns the lights off when you open the door, so you won’t be dazzled.
NeffLight® works by having two halogen spotlights positioned at the bottom edge of the oven. Using a system of mirrors within the door, strong light is thrown into the oven at three different levels, so you can always keep a check on what’s going on.
