Shortbread

Ingredients
125gm butter
½ cup castor sugar
2 1/3 cups plain flour
Pinch salt
 
 
Method
1. Preheat oven on CircoTherm® setting to 150°C. Line baking trays with baking paper.

2. Cream butter and sugar. Add salt.

3. Fold in flour and work with your hands until a firm dough is formed.

4. Roll the mix into two log shapes 40 - 50mm diameter.

5. Slice the logs into 10mm thick rounds and place, evenly spaced, on baking trays.

6. Bake at for 35 minutes, or until a pale golden colour.

7. Cool on trays for 5 minutes before removing to cooling rack.

8. When completely cooled, pack shortbread into airtight containers and store in a cool place.

 
 
Recipe Tips:
Shortbread will keep for one to two weeks in an airtight container. These are so delicious, it is unlikely that they will last this long.
  • This recipe is so easy to prepare, shortbread is likely to become a family favourite all year round.
  • For a decadent treat, try dipping half shortbread in melted chocolate and cooling on sheets of baking paper.
